MANGO TAPIOCA

1 cup tapioca pearls
3 cups water
1–3 mangoes, diced
1 can (12 fl oz / 1 ½ cups) evaporated milk
½ can sweetened condensed milk (about 7 oz / ~½ cup)
Bowl of ice water
A splash of Vainilla Molina

Directions
1. Soak tapioca pearls in room temp water for 20 minutes, then drain.
2. Bring water to a boil in a pot. Add tapioca and cook for 15–20 min, stirring constantly to prevent sticking. Turn off heat, cover and let rest for 5–10 min.
5. Strain and rinse tapioca, transfer to a bowl of ice water to cool completely. Drain again and set aside.
6. In a large bowl, mix cooked tapioca, mango, both milks and a splash of Vainilla Molina.
7. Enjoy!
